Ingredients

The ingredients are:
  • 1 kilogram potatoes (baby Carisma potatoes, halved or quartered, see note in intro, 1 kg)
  • 1 tablespoon olive oil (extra virgin)
  • 2 garlic cloves, minced
  • Lemon juice (from 1/2 lemon, freshly squeezed)
  • Freshly ground black pepper, to season
  • 2 tablespoons parsley leaves, chopped (flat-leaf, finely chopped)
  • Finely chopped chives (1/2 bunch)

How to Make

  • Step 1: Preheat oven to 250C fan forced.

  • Step 2: Line a large roasting pan with baking paper.

  • Step 3: Put potatoes and oil in a bowl and toss well to coat and then arrange in a single layer in prepared pan.

  • Step 4: Add potatoes to oven and reduce temperature to 200C fan forced and roast for 20 minutes and then add garlic to pan and toss gently to combine and roast potatoes for a further 10 minutes or until golden brown and tender.

  • Step 5: Transfer potatoes to a serving bowl and drizzle over lemon juice and season with pepper and sprinkle over parsley and chives and serve.
