  • 185 grams butter, softened
  • 1 1/4 cups brown sugar
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 3/4 cup cocoa
  • 3/4 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 1 cup pecan nuts (toasted, coarsely chopped)
  • 80 grams dried cranberries (sweetened, 1 cup)
  • 100 grams chocolate baking chips

How to Make

  • Step 1: Cream the butter and sugar together until light and fluffy. Add eggs and beat well. Stir in the sifted flour, cocoa, bicarbonate soda and salt and add the nuts

  • Step 2: Spoon heaped tablespoons of mixture onto a greased baking tray, allowing room for spreading

  • Step 3: Bake in a moderately hot oven 190°C for 14-16 minutes or until cooked.

  • Step 4: Cool on a wire rack. Store in an airtight container until required
