Step 1: In a large bowl whisk together first 5 ingredients (-hot pepper sauce). Add vegetables (-cilantro); toss and let stand for 10 minutes.
Step 2: Lay tortillas on a work surface. Divide cabbage mixture evenly among the tortillas, top each with 1/4 of the avocado, 1/4 of the tomato and 2 tablespoons manchego. Roll up tortillas to enclose filling and cut each wrap in half.
