  • The following recipe serves 9 people.

Ingredients

The ingredients are:
  • FOR MEAT SAUCE
  • 1 pound lean ground beef
  • 1/3 cup yellow onion, finely diced
  • 3 garlic cloves, pressed
  • 1/4 cup red wine
  • 2 tablespoons olive oil
  • 16 ounces marinara sauce
  • 1/4 teaspoon thyme
  • 2 small bay leaves
  • Salt & pepper to taste
  • 1 tablespoon dried parsley (or 2 tablespoons fresh chopped)
  • 8 (5 ounces) dry lasagne noodles (cooked aldente as per package instructions)
  • FOR CHEESE SAUCE
  • 16 ounce low-fat ricotta cheese
  • 16 ounce 2% cottage cheese
  • 1/3 cup 2% milk
  • 4 cups mozzarella cheese, grated (divided)

How to Make

  • Step 1: In a large pot, over medium heat add 2 tbsp olive oil & onions, stir fry 5 minutes. Add garlic for additional 2 minutes, stir.

  • Step 2: Add beef and saute until all pink is gone.

  • Step 3: Add 1 cup of Marinara sauce, and red wine..Mix well and cook for a few minutes.

  • Step 4: Add remaining marinara sauce, bay leaves,thyme, salt, pepper and the parsley.

  • Step 5: Mix well, reduce heat, cover & simmer for 15-20 minutes.

  • Step 6: Meanwhile cook the noodles.

  • Step 7: Heat oven to 375f.

  • Step 8: Spread 4 tablespoon of the meat sauce in the bottom of a 9X13 pyrex baking dish.

  • Step 9: Place 4 cooked noodles on the bottom of the dish so the edges are touching.

  • Step 10: Add half the meat sauce, half of the cheese sauce, one cup mozzarella.

  • Step 11: Repeat in the same order the remaining ingredients.

  • Step 12: Cover pan loosely with foil.

  • Step 13: Bake 45 minutes (375f).

  • Step 14: Remove foil and broil for 3-5 minutes until golden.

  • Step 15: Cool for 1/2 Hour.

  • Step 16: Serve & enjoy.
