Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 8 ounces Polish sausage
  • 1/2 cup yellow onion, chopped
  • 1 cup green bell peppers, chopped
  • 2/3 cup carrots, diced
  • 1 jar (12 ounce) fire roasted red peppers (with packing juice)
  • 2 cloves garlic, sliced
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 quarts beef stock
  • 1/4 cup barbecue sauce (your favorite)
  • 29 grams dry instant rice (the 5-minute kind, 1/3 cup dry)

How to Make

  • Step 1: Cut sausage in half lengthwise, and then into 1/4" slices. Place in skillet with oil and saute till browned. Add onions, green peppers and carrots, and saute until onions and peppers are softened.

  • Step 2: Put roasted red peppers with packing juice and garlic in a food processor and pulse until it's pureed. Pour into large saucepan. Add the rest of the ingredients, including the sauteed sausage, onions, and peppers mixture. Add more stock if you like it thinner and more brothy. Bring to a boil, then reduce heat and simmer for 45 minutes. Serve with crusty bread or crackers.
