Ingredients

The ingredients are:
  • 1 1/2 pounds potatoes (baby red, halved)
  • 3 tablespoons yellow onion (diced)
  • 3 tablespoons melted butter
  • 1 tablespoon honey (plus 1 1/2 teaspoons)
  • 1 1/2 teaspoon dry mustard
  • Salt and pepper, to taste

How to Make

  • Step 1: Preheat oven to 375°F. Lightly coat an 11X7 inch baking dish with nonstick cooking spray. Scrub potatoes,cut in half leaving peel on. Place potatoes in a single layer in dish and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper and drizzle over potatoes and onion. Bake for 35 minutes or until tender, stirring halfway through cooking time. Refrigerate any leftovers.
