  • 5 pounds plums (Italian plums)
  • 5 3/4 cups granulated sugar
  • 1 lemon, whole (juice and grated rind)

How to Make

  • Step 1: Make a slit in sides of plums with a sharp knife; remove and discard pits but leave plums whole.

  • Step 2: Arrange plums in the bottom of a have non aluminum saucepan then add the sugar and lemon juice and peel. Set aside in cool area overnight.

  • Step 3: Bring mixture to a boil over medium high heat. Remove from heat and stir. Set aside in cool area for one day.

  • Step 4: Bring mixture to a boil over medium high heat, skimming frequently. Remove fruit from saucepan using a slotted spoon. Boil liquid until syrup registers 230 degrees F (thread stage) on a candy thermometer. Cool completely. Pour into sterilized jars and seal.
