Step 1: Combine sweetened condensed mil, white chocolate melts and egg yolks in a heatproof bowl and place on top of a pot of simmering water and stir until melted and then remove from the heat.
Step 2: Sprinkle the gelatine over 1 tablespoon hot water and stir to combine and then add to the chocolate mixture and allow to cool.
Step 3: Beat cream until thickened and fold into chocolate mixture.
Step 4: Beat egg white until stiff peaks form, then fold into chocolate mixture.
Step 5: Combine strawberries with pureed raspberries and layer chocolate mixture and berry mixture into parfait or serving glasses and refrigerate until ready to serve.
