Ingredients

The ingredients are:
  • 4 (1 pound) pork loin chops (lean, remove excess fat)
  • 1 can (12 1/2 ounce) stewed tomatoes (any flavor, reserve juice)
  • 185 grams dry long grain rice (uncooked, 1 cup)
  • 1 green bell pepper, sliced in rings (I use whole pepper chopped)
  • 4 slices onions, use the whole onion chopped
  • 2 cups tomato juice (use reserved juice and add enough water to make 2 cups liquid)

How to Make

  • Step 1: Brown pork chops in pan with cooking spray till about 1/2 done.

  • Step 2: Drain tomato juice into measuring cup.

  • Step 3: Squeeze tomatoes to get out excess juice. Add enough water to make 2 cups liquid.

  • Step 4: Pour rice into bottom of prepared baking dish and even out.

  • Step 5: Lay pork chops in single layer over rice.

  • Step 6: Mix onion, peppers, and tomatoes put over meat.

  • Step 7: If you have extra vegetables chop and sprinkle over casserole.

  • Step 8: Pour reserved tomato juice over the top.

  • Step 9: Cover and bake in a 350 degree oven for 1 hour or until rice is tender.
