Step 1: Brown pork chops in pan with cooking spray till about 1/2 done.
Step 2: Drain tomato juice into measuring cup.
Step 3: Squeeze tomatoes to get out excess juice. Add enough water to make 2 cups liquid.
Step 4: Pour rice into bottom of prepared baking dish and even out.
Step 5: Lay pork chops in single layer over rice.
Step 6: Mix onion, peppers, and tomatoes put over meat.
Step 7: If you have extra vegetables chop and sprinkle over casserole.
Step 8: Pour reserved tomato juice over the top.
Step 9: Cover and bake in a 350 degree oven for 1 hour or until rice is tender.
