Step 1: In a bowl or cup mix first 5 ingredients (-thyme) together.
Step 2: Heat oil in a skillet over medium high heat.
Step 3: Season lamb with salt and then add to the skillet and cook until well browned on all sides (10 minutes). Transfer lamb to plate.
Step 4: Brush herbed mustard over lamb and roll in breadcrumbs, press to adhere.
Step 5: Preheat broiler.
Step 6: Broil lamb 8 inches from heat source or until crumbs are golden brown and meat thermometer inserted in center registers 135 degrees F for medium rare, turning every few minutes (6-10 minutes).
Step 7: Slice lamb to serve.
