Ingredients

The ingredients are:
  • 3 tablespoons dijon mustard
  • 1 tablespoon sage, chopped
  • 1 tablespoon mint, chopped
  • 1 1/2 teaspoons rosemary, chopped
  • 1 1/2 teaspoons thyme, chopped
  • 2 tablespoons olive oil
  • 1 boned (1 1/2 to 2 pound) rack of lamb (fat trimmed, 1 rack)
  • Salt
  • 1 cup breadcrumbs (fresh)

How to Make

  • Step 1: In a bowl or cup mix first 5 ingredients (-thyme) together.

  • Step 2: Heat oil in a skillet over medium high heat.

  • Step 3: Season lamb with salt and then add to the skillet and cook until well browned on all sides (10 minutes). Transfer lamb to plate.

  • Step 4: Brush herbed mustard over lamb and roll in breadcrumbs, press to adhere.

  • Step 5: Preheat broiler.

  • Step 6: Broil lamb 8 inches from heat source or until crumbs are golden brown and meat thermometer inserted in center registers 135 degrees F for medium rare, turning every few minutes (6-10 minutes).

  • Step 7: Slice lamb to serve.
