Ingredients

The ingredients are:
  • 1 to 2 tablespoons olive oil
  • 1 to 1 1/2 pounds ground beef
  • 1 yellow onion, diced
  • 2 to 3 cloves garlic, minced
  • 1 package (1.25 ounce) taco seasoning mix
  • 185 grams dry rice (long grain white, 1 cup)
  • 1 cup chicken broth
  • 1 can (15 ounce) black beans (drained and rinsed)
  • 1 can (10 ounce) diced tomatoes (RoTel Mild Diced Tomatoes & Green Chilies)
  • 1 cup whole kernel corn (frozen or canned)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and freshly ground black pepper, to taste
  • 1 lime, whole (juice of)
  • 2 tablespoons chopped fresh cilantro leaves
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1 to 2 tomatoes, diced (Roma)

How to Make

  • Step 1: Heat olive oil in a large skillet over medium high heat. Add ground beef, onion and garlic. Cook until beef has browned, about 8 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.

  • Step 2: Stir in rice, chicken broth, beans, RoTel, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover and reduce heat. Simmer until rice is cooked through, about 16-18 minutes. Stir in lime juice and cilantro.

  • Step 3: Remove from heat and top with cheeses. Cover until cheese has melted, about 2 minutes.

  • Step 4: Serve immediately, garnished with tomato, if desired.
