Ingredients

The ingredients are:
  • 200 grams butter (chopped, at room temperature)
  • 2/3 cup caster sugar
  • 3 large eggs, at room temperature
  • 2 cups carrot, coarsely grated
  • 1/2 cup walnuts, chopped
  • 1 1/2 cup all-purpose flour (plain)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons milk
  • 3 small (3/4 pounds) apples (green-skinned)
  • 1 tablespoon demerara sugar
  • 2 tablespoons apricot jam (warmed)

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease a 20cm (base measurement) round springform pan.

  • Step 3: Using an electric mixer, beat butter and caster sugar in a bowl until light and fluffy and then add eggs, one by one, beating well after each addition.

  • Step 4: Add carrot and walnuts and mix well and then fold in sifted combined flour, baking powder and cinnamon and then add the milk, until combined and then spoon into prepared pan and level surface.

  • Step 5: Peel and core and halve apples and place cut side down and thinly slice but not all the way through.

  • Step 6: Arrange apple over batter and sprinkle with demerara sugar.

  • Step 7: Bake for 55 minutes or until a skewer inserted at centre comes and clean.

  • Step 8: Cool completely in pan.
