Step 1: Using a serrated knife trim crusts from bread.
Step 2: Scatter cheese over one half of each bread slice and top with ham and spinach.
Step 3: Brush edges of bread slices with extra beaten egg and fold each slice over to form a triangle and press edges together to seal.
Step 4: Whisk egg and milk in a bowl until combined.
Step 5: Heat margarine in a large frying pan over moderate heat.
Step 6: Working quickly, dip triangles, one by one in egg mixture, being careful not to over-soak triangles in egg mixture or they will become soggy.
Step 7: Add the triangles to the pan and cook, in batches, for 2 minutes each side or until browned.
Step 8: Serve with tomato sauce.
