Ingredients

The ingredients are:
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup super fine sugar (caster sugar)
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/2 cup peanut butter
  • Vanilla extract (2 to 3 drops)
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • Salt, 1 pinch
  • 6 ounces semisweet chocolate chips (or chunks, 1 cup)

How to Make

  • Step 1: Preheat oven to 180C/350F

  • Step 2: Using the electric mixer, cream the butter, super fine sugar, and brown sugar together in a large bowl until fluffy and pale.

  • Step 3: Still using the electric mixer, beat the egg, peanut butter, and vanilla extract into the creamed butter and sugar mixture, until fully mixed in.

  • Step 4: Sift the flour, baking powder and salt into a bowl.

  • Step 5: Add the sifted flour mixture to the butter/sugar/peanut butter mixture and gently mix them together with a wooden spoon. Stir in the chocolate chips.

  • Step 6: Place heaped spoonfuls of the cookie dough onto each baking tray, leaving space between them so they can spread as they bake.

  • Step 7: Bake for 10-14 minutes. Take the trays out of the oven and leave the cookies to set for 2-3 minutes. When set, transfer them onto cooling rack.
