Step 1: Boil potatoes until just tender.
Step 2: Combine potatoes, apples, sauerkraut and onion in a 9 inch square baking dish.
Step 3: Sprinkle on the cheese, top with pork chops.
Step 4: Bake in medium oven (350ºF) for 30 minutes.
Step 5: Meanwhile, in sauce pan, melt butter, add flour. Stir until smooth.
Step 6: Gradually add milk. Bring to boil and stir until thickened. Add Mustard, salt and pepper.
Step 7: Pour sauce over chops. Bake uncovered for 10 more minutes, or until heated through.
