Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 3 garlic cloves, minced
  • 1 yellow onion, diced
  • 1 1/2 pounds ground beef
  • 1 can (15 ounce) diced tomatoes (undrained)
  • 1 can (15 ounce) cannellini beans (drained and rinsed, may substitute Great Northern)
  • 1 can (15 ounce) red kidney beans (drained and rinsed)
  • 2 teaspoons chili powder (or more)
  • 1/4 teaspoon dried red pepper flakes
  • 2 teaspoons cumin (or more)
  • 10 to 12 ounces dry elbow pasta
  • Salt and pepper
  • 4 cups beef broth (or chicken broth)
  • 1 cup shredded cheddar cheese (for topping)

How to Make

  • Step 1: Heat oil in large, deep-sided skillet or Dutch oven. Crumble in the ground beef, garlic, and onion. Cook until meat is browned and onions are translucent. Drain excess fat.

  • Step 2: Stir in broth, tomatoes (with their juice from the can) beans, and spices. Bring to a simmer, then drop in the dry pasta, stirring continuously. Add salt & pepper. Bring back to a boil, then cover loosely, reduce heat a bit and simmer until pasta is soft (It will follow closely what the package directions say regarding time.)

  • Step 3: Remove from heat, and top with cheddar cheese. Cover with lid again to rapidly melt the cheese.
