Ingredients

The ingredients are:
  • 1/3 cup olive oil
  • 1/3 cup Dijon mustard
  • 1/3 cup mustard (whole-grain mustard)
  • 2 lemons, whole (Grated zest and juice of)
  • 4 to 5 garlic cloves, minced
  • 6 Yukon Gold (2 1/2 pounds) potatoes (peeled and quartered)
  • Salt & pepper
  • 1 lemon, whole (to squeeze on after cooking)
  • Minced fresh flat-leaf parsley, for garnish

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a large bowl, whisk together the olive oil, both mustards, lemon zest, lemon juice, and minced garlic. Add the potatoes and toss to coat with the mixture.

  • Step 3: Spread the potatoes on a rimmed baking sheet and sprinkle generously with salt & pepper.

  • Step 4: Bake for 30 minutes. Toss the potatoes, return to the oven, and bake for 15 minutes, or until the potatoes are a deep golden brown and fork-tender.

  • Step 5: Transfer the potatoes to a serving platter, squeeze the fresh lemon juice over them, and sprinkle with parsley. Serve hot.
