  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1 cup coconut palm sugar
  • 112 grams coconut oil (1/2 cup)
  • 2 large eggs
  • 1 1/2 cups unsweetened applesauce

How to Make

  • Step 1: Whisk together the brown rice flour blend, cinnamon, baking soda, baking powder, nutmeg, xanthan gum, salt and allspice; set aside.

  • Step 2: In a large bowl blend together the coconut palm sugar and coconut oil with an electric mixer at medium speed; add the eggs one at a time.

  • Step 3: Add the flour mixture and applesauce alternatively until well blended.

  • Step 4: Pour into 18 greased muffin tin holes;

  • Step 5: Place in a preheated 350 degree Fahrenheit oven and cook for 25 to 30 minutes or a toothpick inserted in the middle of muffin comes out clean.

  • Step 6: Allow to cool and enjoy!
