Ingredients

The ingredients are:
  • 4 leaves romaine lettuce
  • 36 grams poblano chiles (roasted, 6 chiles)
  • 2 serrano chiles (roasted)
  • 1 clove garlic
  • 2 tablespoons yellow onion, minced
  • 1 cup cilantro leaves
  • 1/2 cup parsley
  • 3 1/2 cups water
  • 4 1/2 tablespoons butter
  • 2 cups (370 grams) dry long grain rice
  • 2 teaspoons salt

How to Make

  • Step 1: Using a blender puree the first 8 ingredients (-water).

  • Step 2: In a saucepan over medium heat melt 2 1/2 tablespoons butter and add the rice; cook for under 5 minutes until translucent ---do not scorch butter. Stir in salt and the pureed ingredients and bring to a boil and cook for 2 minutes. Reduce heat to low; cover, and simmer for 20-25 minutes or until water evaporates. Add remaining butter (2 tablespoons) and fluff with a wooden spoon.

  • Step 3: Garnish with chopped cilantro or basil if desired.
