Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 1 tablespoon lemon grass, chopped
  • 1 teaspoon chopped ginger (peeled)
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 176 grams dry basmati rice (1 cup dry rice)
  • 2 3/4 cups chicken broth
  • 1 teaspoon grated lime zest
  • 1/4 teaspoon salt
  • 1/4 cup cilantro, chopped
  • Lime wedges (6)

How to Make

  • Step 1: In a skillet over medium high heat heat the oil and then add the next 5 ingredients (-cumin), saute under 5 minutes or until onion is tender.

  • Step 2: Stir in rice; saute one minute. Stir in broth, rind and salt and bring to a boil; cover; reduce heat and simmer 45 minutes or until rice is tender. Remove from heat.

  • Step 3: Let stand, covered for 10 minutes. Stir in cilantro.

  • Step 4: Serve with lime wedges.
