  • 2 cups whole kernel corn (frozen, thawed, may sub fresh)
  • 1 cup milk (may use 2%)
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon kosher salt

How to Make

  • Step 1: Melt butter in a medium saucepan over medium-high heat; swirl until butter foams.

  • Step 2: Add red bell pepper and thyme; saute 3 minutes.

  • Step 3: Add corn; saute an additional 2 minutes.

  • Step 4: Add milk, flour, and salt, stirring with a whisk. Cover and bring to a boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.

  • Step 5: Place 1/2 cup corn mixture in a mini food processor; process until smooth. Return to pan and stir well.
