Step 1: Cook ground beef in a large skillet until browned, stirring to crumble meat; drain. Add 3/4 cup cheese, green onions, sour cream, parsley, salt, and pepper, stirring well. Remove from heat; cover and set aside.
Step 2: Combine tomato sauce and next 5 ingredients in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, for 5 minutes.
Step 3: Spoon about 1/4 cup reserved beef mixture over tortillas, roll up tightly. Place seam side down in a 13 x 9 x 2 inch baking dish. Pour the tomato sauce mixture over the tortillas. Sprinkle with remaining 1 1/4 cups cheese. Bake uncovered, at 350° for 20 to 30 minutes or until thoroughly heated. Enjoy!
