The ingredients are:
  • 1 pound beef round (strips)
  • 1 bell pepper
  • 1/2 pound apples, chopped
  • 1 cup beef broth (good quality beef bouillon)
  • 1 cup chardonnay
  • 1 tablespoon bacon fat (drippings)
  • 2 whole cloves
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cocoa
  • Dash garlic powder
  • Cinnamon, pinch
  • Xanthan gum, pinch (optional as a thickener)
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Season the beef strips generously with salt and pepper.

  • Step 2: Melt the drippings in a non-stick skillet, brown the meat on all sides and pour into crock-pot; add the peppers, apples and whole cloves to the crock-pot.

  • Step 3: Pour the chardonnay into the skillet and cook until reduced by half; pour into a large measuring cup.

  • Step 4: Add the bouillon, seasonings and xanthan gum to the reduced wine and whisk until well blended and there are no clumps.

  • Step 5: Pour the liquid over the contents of the crock and cover.

  • Step 6: Cook on high for 4 hours.
