  • 2 tablespoon oil
  • 1/2 cup red onion, finely chopped
  • 1 chipotle in adobo (minced)
  • 1 can (15 ounce) diced tomatoes
  • Salt and pepper, to taste
  • 1 pound shrimp (shelled and deveined)
  • 1/4 cup pineapple, diced (fresh)
  • 1 tablespoon Tequila
  • 2 tablespoon cilantro, chopped

How to Make

  • Step 1: In a large skillet, heat oil. Add red onion and chipotle. Cook over moderately high heat, stirring, 3 minutes. Add diced tomatoes, season with salt and pepper and bring to a simmer.

  • Step 2: Nestle in shrimp and cook for 5 minutes, tuning once. Stir in fresh pineapple and tequila, top with chipped cilantro and serve.
