Ingredients

The ingredients are:
  • 9 ounces cooked chicken (chopped, about 2 cups)
  • 3 tablespoons oil
  • 1 small yellow onion, diced
  • 2 celery stalks, diced (med size)
  • 100 grams mushrooms, sliced (8 medium button mushrooms)
  • 3 garlic cloves
  • Salt & pepper
  • 1 can (10 1/2 ounce) condensed cream chicken soup
  • 1/3 cup mayonnaise
  • 1/2 cup milk
  • 1 package Pepperidge Farm (7 ounce) stuffing mix (any flavor you like, or use your own favorite stuffing mix, it should be about 4 cups)
  • 1/4 cup melted butter
  • 1 cup chicken broth

How to Make

  • Step 1: Preheat oven to 350 degrees. Grease an 11x7 baking pan.

  • Step 2: Heat 3 tablespoons oil in a nonstick skillet. Add diced onion, celery, and sliced mushrooms. Saute until lightly browned. Add in garlic and cook 2 minutes. Season with salt and pepper.

  • Step 3: Mix in the chicken soup, mayo, milk, and diced chicken. Mix well. Stir in 1 cup of the dry stuffing mix.

  • Step 4: Spray a casserole dish with cooking spray and transfer chicken mixture to dish.

  • Step 5: Sprinkle the 3 cups of stuffing mix on top. Drizzle 1/4 cup melted butter on top and then 1 cup of chicken broth, making certain to pour the chicken broth on slowly and evenly so that the stuffing mix soaks it up as much as possible.

  • Step 6: Bake for 30 minutes. Serve
