Step 1: Preheat oven to 350 degrees. Grease an 11x7 baking pan.
Step 2: Heat 3 tablespoons oil in a nonstick skillet. Add diced onion, celery, and sliced mushrooms. Saute until lightly browned. Add in garlic and cook 2 minutes. Season with salt and pepper.
Step 3: Mix in the chicken soup, mayo, milk, and diced chicken. Mix well. Stir in 1 cup of the dry stuffing mix.
Step 4: Spray a casserole dish with cooking spray and transfer chicken mixture to dish.
Step 5: Sprinkle the 3 cups of stuffing mix on top. Drizzle 1/4 cup melted butter on top and then 1 cup of chicken broth, making certain to pour the chicken broth on slowly and evenly so that the stuffing mix soaks it up as much as possible.
Step 6: Bake for 30 minutes. Serve
