Ingredients

The ingredients are:
  • 2 tablespoons bacon fat (or vegetable oil)
  • 1 yellow onion, diced
  • 2 to 3 cups butternut squash, diced
  • 3 cloves garlic, sliced
  • 4 medium (1 1/2 pounds) potatoes (cooked, diced, 2-3 cups total)
  • 1 cup whole kernel corn (corn)
  • 480 to 720 grams cooked pinto beans (2 to 3 cups cooked, 1 cup dried beans, prepared earlier)
  • 2 scallions, minced
  • 1/4 cup parsley, minced (can used dried, fresh is nicer)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 3 ounces cheddar cheese (shredded)

How to Make

  • Step 1: Preheat the oven to 375 F and grease a 9″x13″ pan.

  • Step 2: Heat the bacon grease or vegetable oil in a large saute pan and cook the onion and butternut squash for 10 minutes. (This is where you would add the sliced sausage.)

  • Step 3: Then add the garlic and saute another 5 minutes.

  • Step 4: Mix the sauteed veggies with the potatoes, corn, beans, scallions, parsley and spices.

  • Step 5: Pour into the prepared pan and bake for 15 minutes. Sprinkle the cheese over the top and bake another 10 minutes.
