Step 1: Preheat the oven to 375 F and grease a 9″x13″ pan.
Step 2: Heat the bacon grease or vegetable oil in a large saute pan and cook the onion and butternut squash for 10 minutes. (This is where you would add the sliced sausage.)
Step 3: Then add the garlic and saute another 5 minutes.
Step 4: Mix the sauteed veggies with the potatoes, corn, beans, scallions, parsley and spices.
Step 5: Pour into the prepared pan and bake for 15 minutes. Sprinkle the cheese over the top and bake another 10 minutes.
