Ingredients

The ingredients are:
  • 2 pounds moose (meat and bones)
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon parsley, dried
  • 2 bay leaves
  • 1/4 teaspoon marjoram
  • 1/2 teaspoon thyme
  • 1/2 tablespoon salt (might need more, to taste)
  • 1/2 teaspoon pepper (might need more, to taste)
  • 1/2 cup carrots, chopped roughly
  • 2 stalks celery, including leaves

How to Make

  • Step 1: Add meat and bones and remaining ingredients to a large pot and cover with water.

  • Step 2: Slowly bring to a boil, and then let it simmer for 2 to 3 hours, adding water as needed.

  • Step 3: Strain and cool in refrigerator until fat solidifies.

  • Step 4: Remove fat.

  • Step 5: Pour in airtight containers, store in refrigerator for up to 3 days or freeze for future use.
