Step 1: Heat the pre-cooked package of rice according to package directions.
Step 2: Heat a large skillet over medium heat. Add olive oil and swirl to coat. Add leek and shiitake mushrooms. Saute for 4 minutes or until tender, stirring occasionally. Add water, scraping the pan to loosen the browned bits.
Step 3: Stir in the cooked rice, pecans, salt and pepper. Heat thoroughly and enjoy.
