  • 1 package (8.8 ounce) cooked brown rice (whole-grain blend, precooked)
  • 2 teaspoons olive oil
  • 1 leek (thinly sliced, white and light green parts only)
  • 32 grams shiitake mushrooms (caps, sliced, 2 cups)
  • 1/4 cup water
  • 3 tablespoons pecans, chopped (toasted)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Heat the pre-cooked package of rice according to package directions.

  • Step 2: Heat a large skillet over medium heat. Add olive oil and swirl to coat. Add leek and shiitake mushrooms. Saute for 4 minutes or until tender, stirring occasionally. Add water, scraping the pan to loosen the browned bits.

  • Step 3: Stir in the cooked rice, pecans, salt and pepper. Heat thoroughly and enjoy.
