Step 1: In a medium saucepan, heat the margarine over medium heat. Add in chopped onion; saute for about 3 minutes or until soft. Add in cumin, chili powder and smoked paprika; cook for a few minutes to release the flavors (stirring continuously).
Step 2: Add in all remaining ingredients, bring to a simmer stirring, reduce heat to low and continue simmering (uncovered) for about 45 minutes to1 hour until slightly reduced, stirring occasionally.
Step 3: Cool sauce to room temperature then refrigerate for 1-5 days (the longer the better).
