Ingredients

The ingredients are:
  • 1/4 cup olive oil
  • 1 small yellow onion (finely diced)
  • 1 rib celery, diced
  • 2 teaspoon minced garlic
  • 202 grams freekeh (2/3 cup)
  • 1 cup vegetable stock (vegetable, to keep it vegetarian.vegan or chicken)
  • 350 grams string beans (stringless beans, top and tailed and halved)
  • 216 grams broad beans (1 1/2 cups)
  • 1/2 cup pea shoots (she specified at handful)
  • 1 tablespoon sesame seeds (nigella or black sesame seeds)
  • FOR DRESSING
  • 1/4 cup mirin
  • 2 tablespoon miso paste
  • 2 teaspoon caster sugar
  • 2 tablespoon lemon juice
  • 2 tablespoon orange zest
  • 1/4 teaspoon chilli flakes
  • 2 tablespoon sake (or other clear spirit)
  • Salt, to taste
  • Freshly ground black pepper, to taste

How to Make

  • Step 1: Heat oil in a medium pot and add the onion, celery and garlic and cook gently until the onion is tender but not coloured.

  • Step 2: Then add the freekeh and stock and simmer, covered until the freekeh is tender and liquid has been absorbed.

  • Step 3: Simmer the stringless beans until just tender and also the broad beans - slip their grey coats off once cooked.

  • Step 4: For the dressing simply combine the ingredients in jar, seal with top and shake or whisk together in a bowl.

  • Step 5: Place the freekeh mixture into a bowl following by the vegetables and the dressing and mix together light and serve with a scatter of the seeds.
