  • 1 1/4 cups whole wheat flour (organic)
  • 1 1/4 cups all-purpose flour (organic)
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 1/2 cups kale, shredded
  • 5 ounces feta cheese, crumbled (1 cup)
  • 1/2 cup olive oil
  • 2 large eggs
  • 6 ounces plain Greek yogurt (3/4 cup)
  • 3/4 cup milk
  • 1/4 cup walnuts, chopped

How to Make

  • Step 1: Preheat oven to 350 degrees F. Butter sides and bottom of a 9x5-inch loaf pan; set aside.

  • Step 2: In a large mixing bowl , combine flour, baking powder, garlic, nutmeg and salt. Stir in kale and feta cheese.

  • Step 3: In a medium bowl, whisk oil, eggs, yogurt, and milk. Pour into dry ingredients and mix until well combined.

  • Step 4: Pour batter into loaf pan and sprinkle with walnuts. Bake 45 to 50 minutes, or until a toothpick inserted in center comes out clean.

  • Step 5: Let sit out of the oven for 10 minutes, then remove to a cooling rack to cool completely.
