Ingredients

The ingredients are:
  • 150 grams mandarin oranges (zested and juiced, about 1/2 cup of juice, 2 mandarins)
  • 1 tablespoon caster sugar
  • 24 ounces mandarin oranges (extra segmented, 6 mandarins)
  • 250 grams mascarpone cheese
  • 125 ml lemon curd (bought, 1/2 cup)
  • 150 grams savoiardi (6 sponge finger biscuits, coarsely chopped)

How to Make

  • Step 1: Combine mandarin juice, mandarin zest and sugar in a saucepan over medium heat and cook, stirring, for 2 minutes or until sugar dissolves and then add mandarin segments and set aside for 5 minutes to soak.

  • Step 2: Strain mandarin mixture, reserving the liquid.

  • Step 3: Combine the mascarpone and 2 tablespoon of the lemon curd in a bowl.

  • Step 4: Dip half the biscuits in the reserved liquid to lightly coats.

  • Step 5: Divide the biscuits among serving glasses and then top with one-third of the mascarpone mixture and then repeat with the remaining biscuits and liquid.

  • Step 6: Top with the remaining lemon curd, half the remaining mascarpone mixture and half the mandarin and repeat with remaining mascarpone mixture and mandarins.

  • Step 7: Set tiramisu trifles aside for 10 minutes to soak before serving.

  • Step 8: VARIATIONS - Love chocolate with your citrus - swap the lemon curd for chocolate topping or for a berry twist, swap the mandarin for thawed frozen blueberries and dip the biscuits into orange juice instead.
