Ingredients

The ingredients are:
  • 900 grams chicken wings (weight without tip)
  • 60 ml maple syrup (1/4 cup)
  • 60 ml dark rum, optional (1/4 cup)
  • 2 tablespoon hot sauce (Sriracha or chilli sauce)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • FOR BLUE CHEESE SAUCE
  • 80 grams blue cheese (soft)
  • 60 grams sour cream (1/4 cup)
  • 75 grams mayonnaise (1/4 cup)
  • 2 tablespoon chives, finely chopped

How to Make

  • Step 1: Use kitchen scissors to cut each chicken wing in half at the joint and place in a single layer in a glass or ceramic dish.

  • Step 2: Combine the maple syrup, rum sriracha or chilli sauce, paprika and cumin in a small bowl and pour evenly over the chicken wings and turn to coat in the sauce and then cover with plastic wrap and place in the fridge for 2 hours to develop the flavours.

  • Step 3: Preheat oven to 150C.

  • Step 4: Line a large roasting pan with baking paper and place the wings in a single layer in the lined pan and pour the marinade over the wings and then bake, turning occasionally, for 1 hour or until cooked through and sauce reduces and caramelizes.

  • Step 5: Meanwhile, to make the blue cheese sauce, place the cheese, sour cream and mayonnaise in a bowl and using a fork to mash until smooth and then add half the chives and stir to combine.

  • Step 6: Place the chicken wings on a serving platter and transfer the blue cheese sauce to a serving bowl and sprinkle chicken and sauce with remaining chives.
