Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable or olive oil)
  • 1 tablespoon oil (vegetable or olive oil, extra)
  • 4 (2 pounds) zucchini, halved lengthwise, sliced
  • 1 garlic clove, minced
  • 1 tablespoon oregano, chopped
  • 1 tablespoon oregano, chopped extra
  • 3 whole (510 grams) tomatoes, coarsely chopped
  • 2 cans (400 grams) cannellini beans, rinsed
  • 200 grams low-fat feta cheese (crumbled)

How to Make

  • Step 1: Preheat an oven grill/broiler on high.

  • Step 2: Grease a 2 litre (8 cup) ovenproof dish.

  • Step 3: Heat oil in a frying pan over moderately high heat, cook and stir zucchini for 5 minutes or until golden.

  • Step 4: Stir through garlic and oregano, cook and stir for 30 seconds or until fragrant and then gently fold through tomato and beans and cook and stir for 4 minutes or until heated through.

  • Step 5: Transfer to prepared dish and top with fetta and drizzle with extra goil.

  • Step 6: Grill/broil for 5 minutes or until golden brown.

  • Step 7: Serve sprinkled with extra oregano.
