Ingredients

The ingredients are:
  • 1 can salt-reduced (400 grams) baked beans in tomato sauce
  • 4 large eggs, at room temperature
  • 2 tablespoons milk
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon butter
  • 2 jumbo (60 grams) flour tortillas (30 gram each tortilla)
  • 60 grams spinach leaves
  • 100 grams ham (shaved, leg ham)

How to Make

  • Step 1: Place baked beans in a saucepan and cook and stir over moderate heat for 5 minutes or until heated through.

  • Step 2: Meanwhile whisk eggs and milk in a bowl until combines and then stir through cheese.

  • Step 3: Melt butter in a large frying pan over low heat and add egg mixture, tilting pan to cover base and sides and cook for 2 minutes or until golden brown and set.

  • Step 4: Turn, cook for a further minute and transfer omelette to a chopping boards and roll up into a long and slice.

  • Step 5: Microwave tortillas on medium (50%) for 15 seconds or until heated and pliable.

  • Step 6: Place tortillas on a clean work surface and top with spinach, ham, baked beans and omelette and roll up tightly to enclose filling and then cut in half to serve.
