Step 1: In a large bowl, whisk first 5 ingredients together until smooth and blended. Cover and chill 30 minutes.
Step 2: Pour milk mixture into the freezer container of your electric ice-cream maker, and freeze according to manufacturer's instructions. (For my Cuisinart, it's about 30 minutes)
Step 3: Remove the container from the ice-cream maker and place in freezer for 15 minutes.
Step 4: Meanwhile, combine figs, lemon juice, sugar, and chopped fresh mint. Stir the fruit into prepared ice-cream mixture.
Step 5: Transfer to an airtight container and freeze until firm, about 1 to 1 1/2 hours.
