Ingredients

The ingredients are:
  • 400 grams dry fettuccine pasta
  • 300 ml light cream (light cooking specified)
  • 1 cup parmesan cheese, shaved (plus extra to serve)
  • 40 grams butter
  • 1 tablespoon olive oil
  • 400 grams mushrooms (Swiss brown suggested)
  • 1 packet (10 grams) chives, finely chopped

How to Make

  • Step 1: Cook pasta as per packet instructions until al dente and then drain and return pasta to the pan.

  • Step 2: Meanwhile, heat butter and oil in a large frying pan over high heat and add mushrooms and cook, tossing frequently, for 10 minutes or until all liquid has evaporated and mushrooms are golden.

  • Step 3: Add cream and parmesan and stir till cheese melts and cream warms through.

  • Step 4: Add to pasta along with chives and season and toss well.

  • Step 5: Serve topped with extra parmesan.
