Step 1: Cook pasta as per packet instructions until al dente and then drain and return pasta to the pan.
Step 2: Meanwhile, heat butter and oil in a large frying pan over high heat and add mushrooms and cook, tossing frequently, for 10 minutes or until all liquid has evaporated and mushrooms are golden.
Step 3: Add cream and parmesan and stir till cheese melts and cream warms through.
Step 4: Add to pasta along with chives and season and toss well.
Step 5: Serve topped with extra parmesan.
