Step 1: Preheat oven to 180˚C and line a large flat oven tray with baking paper.
Step 2: Slice the potatoes very thinly, (a mandolin slicer works well also) and re form the sliced potato's ~ stack the potato's back together and flatten out on the prepared tray or dish in overlapping rows like fallen dominoes.
Step 3: Brush the potato's with melted butter and season with salt. Insert a bay leaf between potato slices at even intervals.
Step 4: Bake until golden and crispy (which will take about 40 minutes or so)
Step 5: Remove bay leaf's and serve.
