  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoons fresh thyme
  • 3 cups broccoli, chopped (cut into small florets)
  • 3 cups chicken stock
  • 1 cup milk
  • 4 ounces Gorgonzola cheese (crumbled)
  • 1/2 teaspoon white pepper
  • Salt, to taste

How to Make

  • Step 1: Heat the oil in a large sauce pan over medium heat, add the onion and saute until tender, about 5-7 minutes.

  • Step 2: Add the garlic and thyme and saute until fragrant, about a minute.

  • Step 3: Add the broth and broccoli, bring to a boil, reduce the heat and simmer, covered, for 20 minutes.

  • Step 4: Mix in the milk and cheese , let the cheese melt and season with salt and pepper to taste.

  • Step 5: Puree the soup with a hand blender.
