Ingredients

The ingredients are:
  • 92 grams dry instant rice (dry, 1 cup)
  • 1 cup vegetable broth
  • 8 ounces cooked chicken (chopped)
  • 4 ounces chopped spinach
  • 4 green onions, chopped
  • 1/4 teaspoon garlic powder
  • 2 tablespoons ghee (can use butter)
  • Rice vinegar to taste

How to Make

  • Step 1: Melt the ghee in a large skillet and toss in the green onions and rice; cook over medium-high heat stirring occasionally for 5 minutes or until onions start to brown and are softened.

  • Step 2: Pour in the broth and bring to a boil and toss in the chopped spinach; remove from heat, cover and let sit for about 5 minutes or until rice is tender.

  • Step 3: Stir in the chicken and garlic powder, return to burner and cook until heated through.

  • Step 4: Season with rice vinegar to taste.

  • Step 5: Enjoy!
