Ingredients

The ingredients are:
  • 6 (1 1/2 pounds) boneless skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter
  • 1/4 pound fresh mushrooms, sliced
  • 1 tablespoon shallots, finely chopped (or onions)
  • 1/2 cup Cognac
  • 1 1/2 cups whipping cream
  • 1 avocado (ripe, peeled and cut into 1/2 inch slices)

How to Make

  • Step 1: Cut each chicken breast half into 3 strips; sprinkle evenly with salt and pepper.

  • Step 2: Melt butter in a large heavy skillet over high heat. Add chicken, and cook 3 to 4 minutes or until browned. Remove chicken from the skillet; set aside.

  • Step 3: Reduce heat to medium. Add mushrooms and shallots to skillet, and saute until tender. Add cognac; stir well. Gradually add whipping cream, stirring constantly. Cook, stirring occasionally, 30 minutes or until the mixture is thickened.

  • Step 4: Return chicken to the skillet. Add avocado, and cook until thoroughly heated.
