Ingredients

The ingredients are:
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 to 1 1/4 pounds boneless skinless chicken breasts (4 breasts)
  • 3 tablespoons olive oil (extra-virgin)
  • 6 garlic cloves
  • 3/4 pound fresh mushrooms (small)
  • 3/4 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1 bay leaf
  • 1/4 teaspoon dried whole thyme
  • 1 tablespoon butter
  • Garnish
  • Sliced ripe olives
  • Chopped fresh parsley

How to Make

  • Step 1: Combine flour, salt, and pepper. Dredge chicken in the flour mixture. Saute chicken in oil in a large skillet for 4 minutes. Add garlic, and saute for 2 minutes. Turn chicken, add mushrooms and saute for 3 minutes.

  • Step 2: Add broth and the next 3 ingredients; cover, reduce heat, and simmer for 10 minutes, turning chicken occasionally.

  • Step 3: Remove the chicken to a serving platter; keep warm. Cook the mushroom mixture over medium heat for 7 minutes. Remove and discard garlic and bay leaf. Add the butter, stirring until the butter melts. Spoon the mushroom mixture evenly over chicken. Garnish, if desired.
