Ingredients

The ingredients are:
  • 256 grams peanut butter (smooth 1 cup)
  • 168 grams honey (1/2 cup)
  • 112 grams coconut oil (use unrefined coconut oil, unrefined has more coconut flavor, 1/2 cup)
  • 160 grams rolled oats (uncooked, 2 cups)
  • 1 cup shredded coconut
  • 1/2 cup pecans, chopped
  • 1 1/4 cups chocolate baking chips (dark or semi-sweet chocolate chips)
  • 1 teaspoon vanilla extract
  • OPTIONAL
  • Toasted coconut (for topping)

How to Make

  • Step 1: Melt the peanut butter, honey and coconut oil in a medium-size saucepan over medium-low heat. Stir frequently as the mixture melts. When it has melted, remove from the heat and stir in the remaining ingredients. Stir until the chocolate has melted and the ingredients are well combined.

  • Step 2: Pour into an 8x8 pan. Refrigerate until the chocolate hardens, at least 3-4 hours. Slice into 1"-2" square pieces. Store in the refrigerator.
