  • 2 1/4 pounds cucumbers (pickle cucumbers)
  • 2 cups white vinegar
  • 3 cups granulated sugar
  • 1 tablespoon pickling spice
  • 1 tablespoon dill seed
  • 1 teaspoons celery seed
  • 1 teaspoon ground turmeric
  • 2 tablespoons curry powder
  • 1 tablespoon mustard seed
  • 1/2 teaspoon pickle crisp (optional)

How to Make

  • Step 1: Slice cucumbers into 1/4 inch rounds.

  • Step 2: Fill 2 mason jars with cucumbers.

  • Step 3: Combine remaining ingredients in a medium pot and heat on stove top until sugar dissolves. Remove from heat and cool to room temperature.

  • Step 4: Pour brine in equal amounts over cucumbers in jars, topping off with water if needed.

  • Step 5: Cover with lids and rings and refrigerate for a minimum of 3 days before serving.
