Ingredients

The ingredients are:
  • 3 cups potatoes, diced (cooked new or Yukon Gold potatoes)
  • 1/2 cup celery, diced
  • 1 tablespoon pimiento, diced
  • 2 tablespoon sweet pickles, chopped
  • 2 tablespoons sweet onion, finely diced
  • 1/2 cup mayonnaise
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 1 teaspoon mustard, grainy
  • 1 1/2 teaspoons lemon juice
  • 1/2 tablespoon chopped chives
  • 2 tablespoons sour cream (optional)

How to Make

  • Step 1: Boil potatoes until just soft enough for a fork to be inserted. Drain, cool, peel, cut into dice.

  • Step 2: Combine potatoes, celery, pimiento, sweet pickles, and onion; chill.

  • Step 3: When ready to serve, combine remaining ingredients; toss with chilled potato mixture.

  • Step 4: Add a little more mayonnaise if necessary.
