  • 1 1/2 tablespoons honey (wildflower honey)
  • 1/2 teaspoon orange rind, grated
  • 1 tablespoon lime juice
  • 1 tablespoon orange juice
  • 1 teaspoon mustard (whole grain)
  • 1/4 teaspoon kosher salt
  • 12 ounces watermelon, cubed (I used a melon baller)
  • 12 ounces honeydew, cubed
  • 1 cucumber (English cucumber, cut lengthwise into thin ribbons, 1 cup)
  • 4 ounces red onion, sliced (1/2 onion)
  • 3 tablespoons mint leaves, torn

How to Make

  • Step 1: Place first 7 ingredients (-salt) in a large salad bowl; whisk to combine. Add the next 4 ingredients (-onion); toss. Let stand at room temperature for 15 minutes.
