Step 1: Preheat oven to 200C.
Step 2: Line a baking tray with baking paper.
Step 3: Combine maple syrup and sugar in a bowl.
Step 4: Place bacon on the tray and brush evenly with the maple mixture and bake, turning occasionally, for 15 minutes or until caramelised.
Step 5: Meanwhile, brush bread with a little oil and preheat a chargrill to high and cook for 1 minute each side or until toasted.
Step 6: Place avocado, fetta, spring onion and lemon juice in a bowl and using a wooden spoon to coarsely mash.
Step 7: Top toast with avocado mixture, bacon, rocket and chives.
