Ingredients

The ingredients are:
  • 2 tablespoon maple syrup
  • 2 teaspoons brown sugar
  • 8 middle-cut (240 grams) bacon rashers
  • 8 slices (160 grams) sourdough bread (thick slices)
  • 2 avocado (ripe, stoned and peeled)
  • 50 grams feta cheese (soft marinated)
  • 1 spring onion, thinly sliced
  • 2 teaspoons lemon juice
  • Baby rocket leaves, to serve
  • Coarsely chopped chives, to serve

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Line a baking tray with baking paper.

  • Step 3: Combine maple syrup and sugar in a bowl.

  • Step 4: Place bacon on the tray and brush evenly with the maple mixture and bake, turning occasionally, for 15 minutes or until caramelised.

  • Step 5: Meanwhile, brush bread with a little oil and preheat a chargrill to high and cook for 1 minute each side or until toasted.

  • Step 6: Place avocado, fetta, spring onion and lemon juice in a bowl and using a wooden spoon to coarsely mash.

  • Step 7: Top toast with avocado mixture, bacon, rocket and chives.
