Step 1: Preheat oven to 180C/160C fan forced.
Step 2: Line 2 oven trays with baking paper.
Step 3: Using an electric mixer beat butter and sugar in a bowl until pale and creamy and then add essence and then eggs, one by one, beating well after each addition.
Step 4: Sift flour, baking powder and salt together and stir flour mixture into butter mixture and then add banana and chocolate and stir to combine.
Step 5: Place 16 heaped tablespoons of cookie dough onto prepared trays, about 5cm apart, to allow for spreading.
Step 6: Bake for 10 minutes or until golden.
Step 7: Cool on trays till cookies are firm.
