Ingredients

The ingredients are:
  • 30 grams dry spiral pasta (or gluten-free pasta)
  • 2 tablespoons whole kernel corn (frozen)
  • 150 grams broccoli, cut into small florets
  • 100 grams skinless chicken breast (fillet)
  • 2 tablespoons all-purpose flour (wholemeal plain flour or gluten free flour)
  • 160 ml fat-free milk (2/3 cup)
  • Smoked paprika, pinch
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoon low-fat cheddar cheese, grated
  • 1 tablespoon breadcrumbs (wholegrain dried breadcrumbs or gluten free breadcrumbs)

How to Make

  • Step 1: Cook pasta in a small saucepan of boiling water for 10 to 12 minutes or until al dente, adding corn and broccoli in the last 2 minutes of cooking and drain well.

  • Step 2: Meanwhile, preheat a chargrill pan or small non-stick frying pan on medium-high.

  • Step 3: Spray chicken with cooking spray and add to the pan, reduce heat to medium and cook for 3 minutes on each side or until cooked though and set aside for 3 minutes to rest and then slice chicken.

  • Step 4: Preheat grill/broiler on medium.

  • Step 5: Put flour in a small saucepan and whisk in milk, mustard and paprika and cook, stirring over a medium heat for 3 to 4 minutes or until the sauce thickens and comes to a simmer and cook for 1 minute and then remove pan from the heat and stir in parsley and 1 tablespoon of the cheese.

  • Step 6: Add chicken, pasta and vegetables to the sauce and stir well to combine.

  • Step 7: Spoon mixture into a 500ml (2 cup) capacity ovenproof dish and sprinkle over combined breadcrumbs and remaining cheese and transfer to grill/broiler and cook for 3 to 4 minutes or until cheese melts and is golden brown and serve.
