Ingredients

The ingredients are:
  • 1 1/4 cups granulated sugar (divided)
  • 1 1/4 cups brewed coffee (hot)
  • 2 tablespoons cornstarch
  • 3 tablespoons brewed coffee (cold)
  • 2 tablespoons unsalted butter
  • 2 tablespoons rum (dark)
  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1 1/4 teaspoon salt
  • 1 large egg (well beaten)
  • 1/3 cup milk
  • 2 teaspoons shortening (melted vegetable shortening)
  • 2 to 3 bananas, whole (firm)
  • Additional flour for coating
  • Vegetable or peanut oil for deep-frying

How to Make

  • Step 1: In a small saucepan, melt 1 cup sugar; add hot coffee, stirring constantly.

  • Step 2: Dissolve the cornstarch in cold coffee; stir into sugar mixture. Bring to a boil to thicken; remove from teh heat. Incorporate the butter and rum. Keep sauce warm.

  • Step 3: To make the fritters, sift together the flour, baking powder, salt and remaining sugar. Combine the egg, milk and shortening; stir into flour mixture until smooth. Slice each banana into 3 -4 pieces; roll each piece in flour, then cover with batter.

  • Step 4: Preheat oil to 375-degrees Fahrenheit.

  • Step 5: Fry the fritters in batches until golden on all sides, about 5 minutes.

  • Step 6: Drain on paper towels. Place on dessert plates; pour coffee-rum sauce over the fritters.
